Peppermint chocolate chip mocha cookies are my Christmas cookie dream come true! It all started with a simple idea based on my two favorite holiday drinks, a Peppermint Mocha from Starbucks and a Peppermint Chocolate Chip Milkshake from Chickfila. When I started this Christmas cookie series I wanted one cookie that wasn’t being done everywhere, so I combined my two favorite drinks to land on these little balls of cookie heaven! And trust me, they do not dissapoint.
I also had to try and figure out how to get coffee flavor into cookies. Strong brewed coffee wasn’t likely to do the trick, neither were dark roast coffee grounds (which were my only two ideas on my own). Espresso powder sounded promising, but I learned quickly it was nearly impossible to find in stores. Instant coffee was an option, but I am morally opposed to that sludge. Then I found my newest friend: coffee extract.
Now when I first heard of it I was left thinking where the heck can I find coffee extract? Well, believe it or not, right next to all the other extracts in the baking aisle at your local grocery store! I couldn’t believe that an extract of my hands down favorite drink had been sitting in front of my face this whole time and I never knew!? Just right between vanilla, and almond, and peppermint, etc., and needless to say I will be using coffee extract to add more depth of flavor to many, many chocolatey baking recipes from now on.
In the above picture you will see beautiful cookies fresh from the oven with melted peppermint candy all over it! The problem? That melted candy is really sticky, and does not like to budge. So don’t be like me and have to carefully poke and prod each cookie off to have them remain in tact. Put down some parchment paper to help get these bad boys off their cookie sheet when you are done baking! The flexibility of the parchment paper will make the cookies easier to detach and remain intact.
These peppermint chocolate chip mocha cookies are one of my holiday favorites! Inspired by the popular holiday drink, these cookies are a sure crowdpleaser.
- 1 cup flour
- ½ cup unsweetened cocoa powder
- ½ tsp baking soda
- ½ cup unsalted butter, softened
- 1 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp coffee extract (or 1 tbsp instant coffee)
- ½ cup mini semi-sweet chocolate chips
- ½ cup peppermint baking chips
- 1 cup crushed peppermint candies or candy canes (approx.)
Preheat oven to 350ºF
Combine dry ingredients in a medium bowl. Stir until evenly mixed.
Using an electric hand mixer, combine wet ingredients in a large bowl until creamy.
Gradually add dry ingredients in 3-4 portions into wet ingredients and beat until well combined.
Stir in chocolate chips and peppermint chips.
Roll into 1 inch balls, roll lightly through peppermint candy pieces, and place on a parchment paper lined baking sheet about 2 inches apart.
Bake for 9 minutes.
Let cool for 10 minutes to finish baking, then transfer to cooling rack. Cookies will be sticky, so be careful when transferring! The stickiest will go away once cooled.
