I grew up in a home with a Mom who loved to bake, and these were always around come Christmas time. These cookies are not only simple and delicious, but they look like snowballs, which makes them super festive as well during the holiday season.
These yummy pecan snowball cookies are a Christmas classic that is sure to please!
- 1 ½ cups raw pecans, finely chopped
- 2 cups flour
- 1 tsp baking soda
- ½ cup butter flavored Crisco
- ½ cup unsalted butter, softened
- 1 cup powdered sugar, (plus more for coating)
- 2 tsp pure vanilla extract
Preheat oven to 350ºF.
Spray baking sheet lightly with cooking spray. Spread pecans in a thin layer and toast for 4 minutes. Remove from oven after 4 minutes and let cool. **This step is optional but highly recommended
Combine dry ingredients in a medium bowl.
Beat together wet ingredients with a hand mixer on low in a large bowl.
Gradually add dry ingredients into the wet ingredients in 3-4 portions and beat until evenly combined.
Stir in pecans.
Chill dough for 30 minutes (highly recommended, but not necessary). Roll dough into 1 inch balls and place about 1 1/2 inches apart on cookie sheet.
Bake 15-18 minutes, until lightly browned. Dough will take slightly longer to bake if chilled. 🙂
Let cookies cool for about 3 minutes then roll through powdered sugar, while the cookies are still warm. I recommend hand rolling them as the cookies are warm and could potential fall apart. Check out my video below to see me do this!
Place cookies on parchment paper to finish cooling. If desired, roll cookies through sugar a second time.
