Welcome to soup week! I will be sharing three of my favorite soup recipes, today until Friday, and each recipe will have a corresponding video! I have been so excited and preparing this little series for weeks, so I really hope you enjoy these recipes. 🙂
Today I am starting off with one of my favorites to make, as well as eat, potato kale soup. This soup is hearty and delicious, as well as healthy and relatively low calories! I made this soup basically on accident one day by using the leftovers I had in my fridge (this is how many of my recipes come to be) and it was so good I have made it many times since!
Potato kale is a healthy and delicious classic! Ready in under hour, this recipe is sure to be a staple in your kitchen.
- 2 tbsp butter
- 1 cup chopped onion
- 1 tbsp minced garlic
- 6 cups vegetable broth
- 1 cup chopped carrot
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp coriander
- 3 cups chopped potatoes
- 3 cups chopped kale
- shredded mozzarella optional topping
Melt butter in pan over medium high heat. Once melted, add onion and garlic and saute five minutes.
Add 2 cups vegetable broth and carrots. Let simmer five minutes.
Add remaining 4 cups vegetable broth, salt, pepper, and coriander. Stir, cover, and let simmer fifteen minutes.
Add kale and potatoes, stir, cover, and let simmer 30 minutes.
Serve, top with cheese if you so choose, and enjoy!
