5 Minute Healthy Lunches

I have been trying to control my weight lately, and I have been trying my best to find quick and healthy lunches! These two recipes are my favorite because I can make them in 5 minutes when I am home, or prep them ahead of time and pack them for lunch. There isn’t much else to say here, other than enjoy these recipes, pictures, and video!

Salad
This salad is so easy, quick, and delicious! I love getting new ideas of what to put in salads, even if it has been done a million times before, so I decided to come on here and share my recent go to. I personally do cut my own greens and cabbage, but if I didn’t I could probably throw this salad together in less than a minute. I didn’t include any exact amounts in this recipe because I don’t really measure when making this salad, I just use whatever amount seems appropriate for the amount of salad I am making! You can get an idea of how much I use of each ingredient from the pictures below though 🙂

Ingredients:
salad greens of choice (I use equal parts romaine to kale)
tomatoes
cheddar cheese
red cabbage
avocado
Gazebo Room Greek dressing and balsamic dressing

Directions:
1. Place all ingredients in a bowl, toss until dressed evenly, and enjoy!

Burritos
This recipe is a little more exact which makes it a bit easier to follow. I usually will eat one of these burritos for lunch with a side of fruit, or I will just eat two of the burritos to make it easy! The filling itself stores very well in the firdge for up to a week, so don’t worry about using it all in one go. The recipe can also easily be doubled, which I have done before! As it says below, these measurements will create about 4 burritos. You can view the video of me making this recipe by clicking here.

Ingredients:
8″ tortillas
cheese
1 cup black beans (or 1 10.5 oz can, strained)
1 cup corn
1/2 cup salsa
1 tbsp chopped cilantro
1 tsp Adobo seasoning
1 tbsp lime juice

Directions:
1. Place tortillas with cheese in the middle in convection oven at 300°F.
2. Mix beans, corn, salsa, cilantro, adobo, and lime juice together in bowl.
3. Remove tortillas from oven, fill with burrito filling, roll, and enjoy!

Yield: 4 burritos
